STRAWBERRY PRESERVES 
Makes 2 cups.

1 pt. fresh strawberries, halved or sliced
1 1/3 c. sugar
1 tbsp. powdered pectin
1 tbsp. lemon juice

In a 2 quart casserole dish, combine ingredients. Microwave at high seven to eight minutes or until mixture boils. Stir several times. Microwave at high one minute more. Cool to room temperature. Stir occasionally. Mixture will be very thin and will thicken as it cools. Pour into two sterilized 8 ounce jars. Cover with screw-on lids. Cool and refrigerate up to three weeks.

Since microwave ovens vary in power, you may need to adjust your cooking time.
