CARROT CAKE 
2 c. flour
2 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
2 c. sugar
4 eggs
1 1/2 c. oil
3 c. grated carrots (loose pack)

Mix together dry ingredients, set aside. Mix oil, sugar and eggs then add dry ingredients, carrots last. Bake at 350 degrees until it tests done (about 1 hour).

CREAM CHEESE ICING:

Cream together one 3 ounce package cream cheese and 1/2 stick butter. Add 1/2 teaspoon vanilla. Add enough powdered sugar to make creamy.
