FRESH TOMATO RELISH 
1 gallon glass jar
1 1/2 c. cider vinegar
3 lg. onions, chopped fine
1 c. celery, chopped fine
1 sweet pepper, chopped fine
1 1/2 c. sugar
5-7 tsp. ground mustard
2 sticks cinnamon, broken in half
1 tbsp. non-iodized salt

Peel, chop, and drain enough ripe tomatoes to complete filling jar after all other ingredients have been added. If not enough tomatoes are available immediately, just keep adding as tomatoes become available. Store in refrigerator. Will keep for months. Great on hamburgers, hot dogs, tuna salad, and potato salad. My favorite is to put it on cottage cheese on a bed of lettuce. If necessary, put in smaller jars, be sure to break up cinnamon proportionally and add to each jar. Drink juice from tomatoes seasoned with vinegar, sugar, salt, and pepper.
