LEMON BARS 
2 1/4 c. sifted flour
1/2 c. confectioners' sugar
1 c. butter
4 eggs
2 c. granulated sugar
1/3 c. lemon juice, California lemons are better, more tart
1/2 tsp. baking powder

Sift 2 cups flour with confectioners' sugar. Then cut in butter until the ingredients cling. Press into 9 x 13 inch pan and bake at 350 degrees for 20 to 25 minutes, until golden brown. Beat the eggs, lemon juice and granulated sugar together. Add 1/4 cup flour that has been sifted with 1/2 tablespoon baking powder. Pour over baked crust. Bake at 350 degrees for 25 minutes. Sprinkle with confectioners' sugar. Yields: 25 to 30 pieces.
