BUTTERSCOTCH PUDDING PIE 
8" pie crust, baked & cooled
2 egg yolks
1 1/2 c. milk
2/3 c. brown sugar
1/4 tsp. salt
2 tbsp. cornstarch
2 tbsp. butter
1 tsp. vanilla

MERINGUE:

2 egg whites
4 tbsp. sugar

Blend 2 egg yolks and milk together. Mix the brown sugar, salt and cornstarch, then add to the egg and milk mixture. Add the butter and cook over boiling water or low heat until smooth and thick, stirring constantly. Cool and add vanilla, then pour into pie shell.

Beat the egg whites, then slowly add the sugar, beating after each addition until mixture holds its shape. Spoon over pie and place under broiler until meringue is light brown. Cool before serving.
