PAN ROASTED SALMON WITH CALAMATA
OLIVE CRUST & FRESH HERBS
 
4 (7 oz.) portions salmon filet
Crust
1 tbsp. olive oil
2/3 c. minced olives, calamata
1 each shallot, minced
1 clove garlic, minced
1 tsp. lemon juice
1/2 c. bread crumbs
1 lg. c. mixed, whole fresh herbs

CRUST: Blend all ingredients with olives until thoroughly mixed. Rinse all herbs in cold water. Let air dry.

SALMON: Heat saute pan and oil. Sear salmon with flesh side first. When brown, flip over. Place crust on flesh side. Place in 450 degree oven for 10 minutes. Remove from oven and serve with vinaigrette and fresh herbs.
