SALMON WITH SIZZLING HERBS | |
4 salmon steaks (6 to 7 oz. each) salt and pepper 1/3 c. olive oil 1/2 c. chopped fresh coriander (cilantro) 3 tbsp. minced fresh ginger root 1/2 c. chopped scallions 1/4 c. soy sauce (plus extra for serving) Bring some water to a boil in the bottom of a steamer. Season the fish steaks on both sides with salt and pepper. Place the fish steaks in the top part of the steamer. Cover the pan and steam until the fish is opaque throughout, 7 to 8 minutes. Meanwhile, heat the oil in a small heavy saucepan until very hot. (To test the temperature, drop in a piece of chopped scallion; if it sizzles, the oil is hot enough.) Place the steamed salmon steaks on warm plates. Divide the chopped coriander among the salmon steaks, mounding it on top of the fish. Sprinkle with the ginger and then the scallions. Drizzle 1 tablespoon of soy sauce over each salmon steak. Spoon the hot oil over each salmon steak and serve immediately. |
