CREAM OF BROCCOLI AND CHEESE
SOUP
 
2 c. chopped celery
1 c. chopped onion
1 pkg. (10 oz.) chopped broccoli
1 c. cottage cheese
2 c. whole milk
1 can cream of chicken soup, undiluted
1/2 tsp. salt
1/8 tsp. pepper

Cook celery, onion, and broccoli in 2 1/2-quart covered casserole in microwave on high for 6 minutes. Set aside.

Blend cottage cheese in blender or food processor until very smooth; slowly add milk while blending.

Add soup to cheese and milk mixture. Blend. Add mix to cooked undrained vegetables. Microwave on high 3 minutes until heated through. DO NOT BOIL. Makes 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
