SPINACH PIE 
1 lb. cottage cheese or ricotta
1 pkg. chopped spinach (10 oz.)
1 c. grated cheese (Mozzarella, Feta or Cheddar)
2 eggs, slightly beaten
1 tbsp. salad oil
Optional: 1 tsp. grated onion or 1 tsp. grated garlic

Cook spinach about 5 minutes. Squeeze out all water. Combine cottage cheese, spinach, cheese, eggs, oil and seasonings. Pour mixture in pie plate lightly oiled. Bake at 350 degrees for about 40 minutes or until knife comes out clean. Garnish with tomatoes.
