GREEN BEANS MEXICAN STYLE 
2 (9 oz.) pkgs. frozen whole green beans
1 green pepper, seeded & slivered
5 tbsp. butter
1 (4 oz.) bag shredded cheddar cheese
4 white onions, sliced
1 clove garlic, minced
1 (4 oz.) can pimientos, in strips
1 (8 oz.) can tomato sauce
1 tbsp. prepared mustard

Cook beans according to package directions, drain and set aside. In skillet, saute onions, garlic and green pepper in 3 tablespoons of butter until onions are transparent. Stir in pimientos, tomato sauce, cheese and mustard. Cook over low heat a minute or two until cheese melts. Place beans in a 1 1/2 quart shallow, uncovered casserole, add onion and garlic mixture and toss well. Dot with 1 tablespoon of butter. Bake at 350 degrees for about 40 minutes. Serves 8.
