CEREAL COOKIES 
1 c. sifted flour
1/2 tsp. baking soda
1/2 c. soft butter
1/4 tsp. salt
1 egg
2/3 c. sugar
1 tsp. vanilla extract
3 c. cereal (flakes), slightly crushed

Sift together flour, baking soda and salt. Set aside. Beat butter, sugar and vanilla until very light and fluffy. Add egg and beat well. Stir in sifted dry ingredients together with 1 cup cereal. Roll teaspoonsful of dough in remaining cereal. Place on ungreased cookie sheets. Bake in moderate oven (375 degrees) about 10 minutes, or until lightly browned.

Variations:

Chocolate: Stir in 1/2 cup chocolate chips with cereal.

Coconut: Stir in 1/2 cup shredded coconut with cereal.

Nut: Stir in 1/2 cup chopped nuts with cereal.

Raisin: Stir in 1/2 cup raisins with cereal.

Date: Stir in 1/4 cup chopped dates with cereal.

Note: For even higher protein value, 1/4 cup non-fat dry milk may be beaten with the butter mixture. (Once I added nuts to the dough, then rolled dough alternately in cereal, crushed nuts and coconut for a variety of cookie.)
