About 1 gal. cucumbers, sliced 1/2" thick 1/2 c. pickling salt 2 tbsp. alum 1 1/2 pts. vinegar 8 c. sugar 1/4 tsp. oil cloves 1/2 tsp. oil of cinnamon 1 oz. celery seed Green food coloring Peel carefully, remove seeds and slice 1/2" thick. Soak in 1 1/2 cups salt to 1 gallon water for 3 days. Drain and set in ice water for 3 days. Then on the 7th day, you simmer in 2 tablespoons powdered alum for 2 minutes or until tender and clear. Then drain and pour over hot syrup. Drain off hot syrup for 3 days and heat juice to boiling. Heat for 3 days and on 3rd day, add pickles. Seal while hot. |
