FRESH STRAWBERRY TARTS OR PIE 
1 (8 oz.) pkg. cream cheese
1/2 c. sugar
2 tbsp. lemon juice
1 tsp. grated lemon rind
2 tbsp. cream or milk
8 baked tart shells or 1 baked pie shell
Fresh ripe strawberries

Mix the cream cheese, sugar, lemon juice, rind, cream or milk; cream until of whipped-cream consistency. (Leave the cheese out of the refrigerator several hours -- it works better.) Line the tart shells or pie shell with the cheese mixture; fill with fresh whole ripe berries and cover with:

STRAWBERRY GLAZE:

3 c. strawberries
1 c. sugar
3 tbsp. cornstarch

Mash berries with the sugar and let stand 30 minutes. Mix with the cornstarch and cook until thick and clear. Strain and cool. Pour over the berries and refrigerate. They are divine! I make small ones for buffet parties and they are gobbled up in a hurry! Whipped cream on top for garnish.
