PINTO BURGERS | |
2 1/2 c. cooked pinto beans 2 eggs 1 tbsp. onion powder 1 grated carrot 1 1/2 tsp. salt 1 c. flour (can use whole wheat) Pam or oil for frying Blend on low, 1 egg with 1/2 of beans (add water if necessary). Remove from blender and then blend other egg with remaining beans. Combine in a bowl and add onion powder, salt and carrots. Stir well. Add flour a little at a time and mix thoroughly. Spray frying pan with Pam or put oil in pan. Shape mixture into patties about 3 inches in diameter and 1/2 inch thick, or drop by large spoonfuls into pan and flatten. Fry for 2-3 minutes on each side. Drain on paper towel if frying in oil. Serve on buns with desired toppings. Makes 12 burgers. |
