SAUERKRAUT RELISH 
2 c. sauerkraut, drained
2 c. shredded carrots
1 c. chopped celery
1 c. chopped bell pepper
1/2 c. chopped onion
3/4 c. sugar
1/3 c. white vinegar
1/4 c. pimentos
1 tsp. salt
1/2 tsp. pepper

Mix and place in refrigerator 4 hours before serving.
