APRICOT STEAK 
Salt & pepper to taste
1/4 c. flour
1/4 c. fat
1 1/2 lb. round steak
2 tbsp. chopped onion
1 #2 can apricot halves

Season steak; cut into serving pieces. Dredge steak in flour; reserve remaining flour. Brown onion and steak in fat. Remove to casserole dish. Drain apricots, reserving juice. Blend reserve flour and juice; add to casserole. Cover. Bake at 350 degrees for 30 minutes or until almost tender, adding water as needed. Add apricots. Bake uncovered for 15 minutes longer. Yields 6 servings.
