YAKITORI 
1 c. sake or cooking sherry
1 c. soy sauce
1 tbsp. sugar
2 tsp. pepper
1 1/2 lbs. chicken, or beef, cut into bite size pieces

Combine sake, soy sauce, sugar, and pepper; simmer for 15 minutes. Place meat onto small wood or bamboo skewers. Broil until done, brushing with sauce frequently. Sprinkle with additional pepper. Yield: 4 servings.
