BROCCOLI AND HAM QUICHE 
1 tbsp. vegetable oil
1/2 c. onions, chopped
1 (10 oz.) pkg. chopped broccoli or spinach, frozen
1 c. ham, cubed (opt.)
10" pie crust
2 c. cheddar cheese, shredded
3 eggs, beaten
1/2 tsp. salt
1/4 tsp. black pepper
1/8 tsp. nutmeg

Saute broccoli and onion in oil. Mix eggs, spices and cheese together. Add to onion and broccoli. Partially bake the pie shell for 10 minutes at 400 degrees. Pour mixture into shell and bake at 325 degrees for 20 to 30 minutes or until set and brown.
