PINEAPPLE DROP COOKIES 
3 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
1 c. shortening
1 1/2 c. sugar
2 eggs, beaten
1 tsp. lemon juice
8 oz. can crushed pineapple

Sift together dry ingredients and set aside. Cream shortening and add sugar gradually. Cream until it is light and fluffy. Add eggs and lemon juice. Add dry ingredients alternately to creamed mixture with pineapple. Mix well. Drop by teaspoons onto greased cookie sheets several inches apart. Bake at 350 degrees for 12-15 minutes. Makes 5 dozen cookies.

These freeze well and mail well; great for college care packages!
