AUNT BEULAH'S COUNTRY FRIED
TATERS
 
5 to 6 lg. potatoes
1/3 c. oil
Salt
Pepper
1/2 c. water

Peel potatoes and slice into round slices about 1/2 inch thick. Place into hot oil and brown, not fry. Salt and pepper to taste as potatoes brown. When potatoes are browned well, drain off excess oil. Place skillet back on stove and add water to potatoes. Simmer on medium heat until water is gone. Turn potatoes occasionally to prevent sticking. Serve hot with country cornbread and beans.
