NEVER FAIL PIE CRUST AND SONKER
RECIPE
 
PASTRY:

3 c. flour
1 tsp. salt
1 c. shortening less
1 egg
10 tbsp. cold water
2 tbsp. vinegar

FRUIT SONKER:

8 c. fresh fruit plus 1 c. water
1/3 c. flour
1 tsp. cinnamon
1/2 c. butter
1 tsp. almond extract (optional)

Mix flour and salt, cut in shortening to form small particles. Add remaining ingredients. Mix to form pastry. Wrap in foil and chill. Roll out for pies or sonker. Make 6 to 8 crusts.

For Sonker: Line bottom of pan with strips of pastry. Bake 10 minutes at 350 degrees. Do not brown, remove from oven. Add a fruit mixture and cover with small strips. Sprinkle with sugar and dot with butter. Bake at 375 degrees for 30 to 40 minutes.
