CHEESECAKE 
6 eggs
1 1/2 c. sugar
1/2 tsp. salt
1/2 tsp. vanilla
3 lbs. cream cheese, room temperature
1 lemon

CRUST:

1/2 lb. ground Oreo cookies

Combine eggs, sugar, salt, and vanilla. Mix at low speed until thick. In separate bowl, soften cream cheese with mixer and add the juice from 1 lemon. Gradually combine with egg mixture until soft and smooth. Butter 10 inch spring-form pan and press ground cookies in place to form crust. Pour in cheese batter. Bake about 1 hour or until done. Chill thoroughly, preferably overnight, before serving.
