MUSHROOM FRITTERS 
4 oz. mushrooms, roughly diced
1 tbsp. lemon juice
2 tbsp. chopped green onion
2 tbsp. chopped dparsley
1 c. sifted all-purpose flour
1 tsp. baking powder
3/4 tsp. salt
1/2 tsp. thyme leaves
1 egg, separated
2/3 c. milk
Oil for deep frying

In large bowl toss together mushrooms, lemon juice, green onion and parsley. In small bowl combine flour, baking powder, salt and thyme. Blend into mushroom mixture. Blend until moistened. Beat egg yolks and milk together. Stir into mushroom mixture. Beat egg whites until peaks form; fold into mushroom mixture. Heat oil to 375 degrees. Drop batter by tablespoon full into boil. Fry few at a time until golden brown, about 2 minutes, turning once. Drain on paper towels.
