ROCK CAKES | |
2 1/4 c. self-rising flour 1/2 c. butter 1 egg 1/2 c. + 2 tbsp. powdered sugar 1 c. raisins 1 tbsp. milk Cut butter into flour until it looks like course bread crumbs. Add sugar and raisins. Mix well. Beat egg into milk and add to flour mixture. Stir well. Spoon onto a greased cookie sheet. Bake in a preheated 400 degree oven about 15 minutes or until cakes are brown and firm to touch. Cool on wire rack. Glaze and serve. GLAZE: 1/4 c. butter 2 c. powdered sugar 3 tbsp. milk 1 tsp. vanilla Melt butter, mix in sugar and milk and vanilla. Spoon over cakes. If too thick add additional milk. |
