STUFFED SHELLS 
24 jumbo shells
3 eggs
15 oz. ricotta cheese
8 oz. Mozzarella cheese
1/2 c. Parmesan cheese
1/4 c. chopped cilantro
1 med. onion, chopped
1 lb. extra lean ground beef
32 oz. spaghetti sauce
Salt and pepper to taste
2 cloves garlic, minced

Beat eggs. Stir in ricotta, half of Mozzarella and half of Parmesan cheeses. Add cilantro, salt and pepper. Let stand. Brown hamburger, add onions and garlic. Drain. Mix cheese and hamburger mixtures. Fill shells, cooked according to package directions. Place in a casserole. Pour sauce over shells. Sprinkle with remaining cheese. Cook at 400 degrees for 30 minutes.
