SAUTEED APPLES 
2 tbsp. butter, melted in skillet
3 apples, peeled & sliced (5 c.)
1 tsp. grated lemon rind
1/4 c. sugar
2 tbsp. half and half

Melt butter and add apples and lemon rind. Stir to coat well, add sugar and half and half and stir until glazed and crunchy. Add brandy if desired.
