BEEF STROGANOFF 
2 tbsp. flour
1 tbsp. salt
1/4 tsp. pepper
1 lb. sirloin, 1/4 inch thick
1 clove garlic
1/4 c. butter
1/4 c. minced onion
1/4 c. water
1 can consomme
1 lb. sliced mushrooms
1 c. sour cream

Combine flour, salt, and pepper. Trim meat; rub both sides with garlic. Pound both sides with flour. Cut meat into 1 inch squares. Melt butter; brown onions. Remove from skillet. Brown meat; remove from skillet. Add water to skillet and stir. Return onion, butter, and meat to skillet. Cover and simmer 15 minutes. Add consomme and mushrooms. Cook over low heat about 1 hour until mixture thickens. Stir in sour cream just before serving. Serve over noodles.
