RAVIOLI DOLCE 
1 3/4 c. flour
1 1/2 tbsp. butter
1 1/2 tbsp. shortening
Water

Mix flour, butter, and shortening together. Add just enough water to make a stiff dough. Roll dough as for ravioli; cut into 2 inch squares. Place 1 teaspoon of filling in center of each square. Cover with another square of dough. Seal edges tightly with a fork, by crimping. Fry in hot fat to a golden brown. Sprinkle with powdered sugar.

RIPIENI (filling) :
1/2 lb. Ricotta cheese
1 egg white
2 egg yolks
1/2 tsp. vanilla
Confectioners' sugar
2 tbsp. sugar

Or a fruit filling may be used.
