FILLETS OF SOLE THERMIDOR 
5 tbsp. butter
8 sole or other fillets
2 tsp. salt
1/2 tsp. seasoned salt
1/8 tsp. pepper
1 1/4 c. milk
3 tbsp. flour
1 c. grated Cheddar
3 tbsp. sherry (optional)
Paprika

350 degree oven. Melt 2 tbsp. butter and brush over fillets. Sprinkle with salt, seasoned salt and pepper. Roll each fillet and place seam side down in baking dish. Pour 1/2 cup milk over fillets and bake 25 minutes, until fish flakes.

Make cheese sauce using remaining ingredients. Spoon liquid from fish. Stir 1/4 cup into cheese sauce. Pour over fish and sprinkle with paprika. Broil 1 minute. 8 servings.
