PINEAPPLE COOLER 
8 oz. can crushed pineapple in juice
1 pkg. lime Jello, sugar free
3/4 c. boiling water
1/2 c. lemon sherbet, softened

Drain pineapple reserving juice. Add water to juice to make 1/2 cup. Dissolve Jello in boiling water. Measure 1/2 cup Jello and add sherbet; stir until completely melted. Add half the pineapple. Pour into 3 cup bowl or 5 dessert glasses. Chill until set but not firm, about 15 minutes. Add remaining Jello. Chill until thickened and spoon into bowl. Chill about 2 hours. Garnish with fruit and whipped topping Makes 2 1/2 cups or 5 servings.
