GAIL'S MICROWAVE PEANUT BRITTLE 
My microwave is 1000 watt and has a turntable. This peanut brittle is so good you won't be able to stop eating it!

1 cup raw peanuts
1 cup white sugar
1/2 cup light corn syrup (Karo)
1/8 tsp. salt
1 tbsp. butter
1 tsp. vanilla
1 tsp. baking soda

Lightly grease a cookie or jelly roll sheet with butter or non-stick cooking spray (Pam). Do this before starting the peanut brittle, as you'll need it ready when you add the baking soda.

Using a microwave safe 2-quart mixing bowl or casserole dish (you'll need something with handles) combine raw peanuts, white sugar, corn syrup and salt. Mix well. It will be thick.

Microwave 4 minutes on HIGH, remove and stir well. Microwave 3 minutes on HIGH, remove, add butter and vanilla, stir well. Microwave 1 1/2 minutes on HIGH, remove and stir well. Add 1 teaspoon baking soda. Mix well and fast as the brittle will foam. Pour onto the greased sheet and let cool.
