RITZ CRACKER PIE 
3 egg whites
1 c. sugar
1/2 tsp. vanilla
16 Ritz crackers (coarsely crushed)
2/3 c. chopped nuts
Cool Whip (1 carton)

Beat egg whites, sugar and vanilla together until stiff peaks form. Fold in crackers and nuts. Pour into greased 9 inch pie plate. Bake at 325 degrees 20 minutes. Cool, then cover with Cool Whip.
