CURRIED CRAB SALAD 
6-8 oz. crab meat
1/2 c. celery, chopped
2 thinly sliced green onions
1/2 c. water chestnuts, sliced
1 tbsp. sherry
1/2 c. mayonnaise
1 tbsp. lemon juice
1/2 tsp. shoyu
1/2 tsp. curry
1/2 tsp. salt
1/8 tsp. pepper
6 tomatoes
Lettuce
Parsley

Drain crab meat and shred, reserving a few whole pieces for garnish. Combine crab, celery, green onions and water chestnuts. Add sherry to mayonnaise and mix lemon juice, shoyu, salt, curry and pepper.

Combine with seafood mixture, toss lightly and chill well. Cut 6 tomatoes into wedges but not through bases of the tomatoes. Spread sections apart and place on lettuce - line dishes and fill with crab salad. Garnish with pieces of crab and sprigs of parsley.
