MARINARA ON BEDS OF SPINACH AND
ORZO
 
1/2 c. orzo (uncooked)
1 (10 oz.) pkg. frozen leaf spinach, thawed and well drained
1 tbsp. olive oil
1/4 tsp. pepper
1 (12 oz.) jar marinara sauce
1/2 c. shredded Parmesan cheese

Cook orzo according to package directions; keep warm. Cook spinach in olive oil in a skillet over medium heat, stirring constantly until thoroughly heated. Sprinkle with pepper, tossing well. Spoon evenly onto 2 individual plates; set aside.

Cook marinara sauce in skillet over medium-high heat, stirring constantly until thoroughly heated. Spoon orzo onto spinach; top with marinara sauce and sprinkle with Parmesan cheese.
