ALCARTA 
1 (4 lb.) roast, boneless
2 to 3 onions, cut into pieces
2 cloves garlic, crushed
1 tbsp. butter or beef lard
1/2 c. white wine
1/2 c. water
1 tsp. wine vinegar
1/3 lb. bacon or salt pork, cut into cubes
3 bay leaves
1 tbsp. crushed red pepper
1 tbsp. Portuguese allspice OR 3 tbsp. regular allspice

Put all ingredients in crock pot. Cover and cook at 250 to 300 degrees (never higher) for 4 hours. Serves 5 to 6.
