MICROWAVE PEANUT BRITTLE 
1 c. sugar
1/2 c. white corn syrup
1 c. roasted peanuts
2 tbsp. butter
1 tbsp. vanilla
1 tsp. baking soda

Grease a cookie sheet or use teflon sheet. Stir together in a 1 1/2 quart or larger casserole the sugar and syrup. Microwave on high for 5 minutes. Stir in peanuts. Microwave on high for 4 minutes. Add butter and vanilla to syrup, blending well. Microwave on high another 2 minutes. Peanuts will be lightly browned and syrup will be super hot. Add the baking soda and quickly stir until syrup is light and foamy. Quickly pour onto a greased or teflon cookie sheet. Let cool break into pieces and store in an airtight container.

Note: This recipe works well in my microwave but has come out chewy instead of brittle in some other ovens. If this happens in your oven increase the cooking time one or two minutes either before or after the peanuts are added. If cooking time is increased after the peanuts are added they will be darker which you may prefer. You may need to experiment to get it to suit you. Makes 1 pound.

Since microwave ovens vary in power, you may need to adjust your cooking time.
