SHEILA'S FRESH FRUIT CAKE 
2 c. apples, diced
2 c. sugar
2 eggs, beaten
1/2 c. vegetable oil
2 tsp. baking soda
1/2 tsp. salt
1 c. walnuts, chopped
2 c. flour
2 tsp. vanilla
2 tsp. cinnamon

Mix by hand. Combine apples and sugar; set aside. Combine eggs, oil and vanilla. Pour over apples. Combine flour, soda, cinnamon and salt. Add to apples; mix well. Add nuts. Bake in greased and floured Bundt pan at 325 degrees for 75 minutes. Serve warm or cool.
