PECAN CAKE | |
1 lb. butter 2 c. sugar 6 eggs, beaten 1 tsp. baking powder 1/4 lb. candied pineapple, chopped 1/4 lb. candied cherries, chopped 2 1/2 c. pecans, chopped 1 lb. white raisins 4 tsp. lemon flavoring Cream butter. Add sugar gradually. Add beaten eggs. Sift flour with baking powder. Dredge fruits and nuts with 1 cup flour; set aside. Add flavoring to butter and egg batter; then add rest of flour. Fold in fruits and nuts. Bake in a greased and floured 10" tube pan in a 250°F oven for about 2 hours until done. |
