ORANGE MACADAMIA NUT COOKIES 
4 cups all purpose flour
2 cups sifted powdered sugar
1 cup cornstarch
2 cups butter
1 cup chopped macadamia nuts or toasted walnuts
2 egg yolks
1 tbsp finely shredded orange peel
4-6 tbsp orange juice
Granulated sugar

In a large mixing bowl, stir together flour, powdered sugar, and cornstarch. Using a pastry blender, cut in butter till mixture resembles coarse crumbs. Stir in nuts.

Combine egg yolks, 1 Tbsp orange peel and 4 Tbsp of the juice; add to flour mixture stirring till moistened. If necessary, add remaining juice to moisten.

On a lightly floured surface, knead dough till it forms a ball. Shape dough into 1-1/4 inch balls. Arrange balls on an ungreased baking sheet. Flatten by pressing with the bottom of a glass to 1/4 inch thickness, dipping glass into granulated sugar for each round.

Bake in a 350°FF oven for 12-15 minutes or till edges begin to brown. Remove from baking sheet. Cool on a wire rack. Frost with an orange frosting of 2 cups sifted powdered sugar, 3 Tbsp softened butter, 1 tsp finely shredded orange peel and enough orange juice (2-3 Tbsp) to make an icing of spreading consistency.
