SWEET POTATO PIE 
3 c. sweet potatoes
1 stick butter
3 c. sugar
4 eggs, beaten
1 pinch nutmeg
1/2 can evaporated milk (13 oz. size)
1 tsp. vanilla
Pastry for 10 inch pie shell

Boil the potatoes in the jackets until done, peel and mash. Add the butter, sugar, vanilla, and nutmeg. Combine the beaten eggs and milk and mix with the potatoes until blended. Pour into the pastry shell. Bake at 350 degrees for 1 hour or until done. Check with toothpick when it comes out clean, it is done.
