LAYERED TORTE | |
2 cloves minced garlic 4 tbsp. butter 1/2 tsp. grated nutmeg 2 pkgs. frozen chopped spinach, thawed & squeezed dry 1/2 c. & 2 tbsp. grated Parmesan cheese 1 red bell pepper 1 round loaf bread (King's Hawaiian) 8 oz. thinly sliced Swiss cheese 4 oz. thinly sliced pepperoni Olive oil Saute garlic and butter for 1 minute; add spinach, nutmeg and Parmesan cheese. Cook until cheese is melted. Cool. Cut red pepper into 1x1 inch squares. Simmer in water until soft. Dry on paper towels. Slice top of bread loaf off and reserve. Hollow out bottom of loaf, leaving 1/2 shell. Line bottom and sides of hollow loaf with some Swiss cheese. Spread with half of spinach mixture. Add layer of Swiss cheese, add half of pepperoni, bell pepper squares and remaining pepperoni. Add layer of Swiss cheese. Spread with rest of spinach mixture. Top with rest of Swiss cheese. Replace top of bread loaf. Brush liberally with olive oil. Wrap in foil. Bake 25 minutes at 350 degrees. Refrigerate. Serve at room temperature. Cut into wedges. |
