COMPANY FISH 
Fish, bluefish or other lg. ocean fish
1 can tomatoes, drained
Scallions, cut tops in third
White wine
Olive oil
Mayonnaise (Hellmann's, or make your own)
Garlic
Tabasco
Covered baking dish

Set oven to 350 degrees.

1. Pour some oil in baking dish, turn dish to distribute oil. Place 1/2 scallion tops in bottom. Place fish fillets on top. Place remaining scallion tops on fish.

2. Distribute tomatoes around fish; pour in white wine to barely cover fish.

3. Cover dish tightly (you can use foil). Bake for 30-40 minutes.

4. For sauce, add 2-3 cloves mashed garlic and a few drops of Tabasco to mayonnaise.

5. Serve fish in a bowl with sauce on top; crusty French bread to sop up juice; and a salad.

Preparation time is 35-40 minutes, including cooking.
