GERMAN POTATO SALAD 
8 good size potatoes - boiled (sliced or diced)
1 stalk celery, diced
1 onion, minced
1 tbsp. parsley, minced
2 hard boiled eggs (lg.), sliced

Combine in bowl.

Fry 4 to 8 slices bacon to crisp, remove and save. Remove some of the grease.

DRESSING:

2 eggs, well beaten

Add:

1 c. sugar (or a little less)
1/4 tsp. dry mustard
1 tsp. salt
1/4 tsp. pepper or white pepper
1/2 c. vinegar - dilute with 1/2 c. water

Mix well and add to grease in pan, stir constantly until it thickens (about 10 minutes). Pour over potato mixture - blend in lightly. When ready to serve, add crisp bacon and parsley. 6 portions.
