FILLING: 6 freshly boiled mashed potatoes 1 lb. sliced American sandwich cheese DOUGH: 6 c. flour 2 tsp. salt 8 eggs 1/3 c. water FILLING: Combine filling ingredients; set aside. DOUGH: Mix flour and salt. Make a hollow in dough and drop in the eggs and water. Make a smooth dough and let set 30 minutes. Take 1/3 of dough on a well floured board and roll out quite thin. Cut into 3" squares. Place a spoonful of filling on each. Fold over into a triangle and seal edges with a fork. Drop triangles into boiling water to generously cover and cook 10 to 15 minutes. Place in heavy skillet 3/4 pound butter, 2 cups finely chopped onions. When butter is pale brown, add cooked Corners. Serve while hot. |
