THE BESTEST KIND BANANA BREAD | |
1/2 c. butter 1 1/4 c. raw sugar (health foods stores carry it) 2 eggs, unbeaten 4 or 5 med. sized bananas (the riper the better for full flavor) 1/2 c. wheat germ 1 1/2 c. flour 1 tsp. baking soda 1 tsp. baking powder 1/2 c. chopped walnuts Cream together softened butter and sugar. Add two unbeaten eggs and continue beating until smooth. Stir in the wheat germ. Sift together the flour, baking soda and baking powder. Stir into the creamed mixture. Add the mashed bananas, one at a time. Lastly, add the chopped walnuts. Pour into a greased loaf pan. Bake at 325 degrees for at least 1 hour. I use my trusty broom straw to test for doneness. If it comes out dry after I poke it into the thickest part of the bread, it's done! |
