PRUNE WHIP | |
2 egg whites 1/4 tsp. cream of tartar 2/3 c. sugar 1 c. pitted prunes 1 c. hot water 1 tbsp. fresh lemon juice Cut prunes into quarters or small pieces and add to the hot water. Boil 5 minutes. Add lemon juice. Cool mixture. Beat egg whites. Add cream of tartar. Add sugar - a little at a time. Beat until stiff and sugar is dissolved. Fold in slightly cooled prune mixture. Spread in a well buttered 9 inch cake or torte plate. Bake for 20 minutes at 325 degrees. Serve with Cool Whip or whipped cream. |
