POTATO BEET SALAD 
2 c. diced, cooked potatoes
2 c. diced, cooked beets
1/2 c. peas
2 tbsp. chopped parsley
2-3 c. green onions

DRESSING:

3 tbsp. mayonnaise
6 tbsp. yogurt
3 tbsp. lemon juice
Bit of oil
Salt & pepper

Chill all vegetables. Combine all in bowl; mix dressing ingredients and add to vegetables. Mix well.
