2 lbs. chuck steak, boned, about 1 1/2 - 2" thick 5 med. sized potatoes, cut & quartered 1 lb. fresh string beans, uncooked (peas may be substituted) 1 c. strained tomatoes 1 tsp. oregano 2 tbsp. chopped parsley 1 scant tsp. salt 1 tbsp. oil 1 c. water 6 lg. carrots, diced Place steak in a deep pan and place vegetables on top. Mix tomatoes, water and oil and pour over the top. Cover tightly and cook over medium low heat on top of stove for one hour. |
