BACON-FRIED CHICKEN | |
Off the charts bacon goodness! 1/2 lb. bacon (about 8 slices) 1/2 cup all-purpose flour 2 tsp. salt (or to taste) 1/4 tsp. white pepper 1/2 tsp. ground rosemary 1/2 tsp. ground thyme 1 (2 1/2 to 3 lb.) whole chicken, cut-up Place bacon strips side by side in a shallow roasting pan and set in a preheated 400°F oven to bake 10 minutes. Lift bacon from pan (leave drippings) and set aside until later. Combine and thoroughly mix flour, salt, pepper and herbs in a paper or Ziploc bag. Add a few pieces of chicken at a time and shake to coat well. Place them in the roasting pan and turn to coat with the bacon drippings. Let bake at 400°F for 30 minutes. Turn chicken, continue baking 15 minutes more. Arrange the slices of bacon over the chicken and bake another 5 minutes while it heats up and gets crisp. Serves 4. Submitted by: Ellen |
