GRAHAM CRACKER CRUST 
I just spray pan with Pam and sprinkle with graham cracker crumbs.

1/2 c. sugar
1/2 tsp. cinnamon
1/2 c. melted butter

Reserve 3 tablespoons crumb mixture for topping.

Press remainder on bottom and 2 1/2 inches up sides of 9-10 inch springform pan.

FILLING:

Put 3 eggs and 2 (8 ounce) package cream cheese (at room temperature) into blender or food processor. Blend until smooth. Add 1 cup sugar, 1/4 teaspoon salt, 2 teaspoons vanilla and 1/2 teaspoon almond extract. Blend until mixed. Fold in 3 cups or 1 1/2 pints dairy sour cream.

Pour filling into crust. Sprinkle reserved crumbs over top. Bake at 375 degrees for 40-45 minutes or until just set. Filling will be rather soft. Cool. Then chill well. A good thing to make the day or evening before serving. Enjoy!
